Assessment of Non-carcinogenic Risk of Nitrate in Agricultural Products

Background: Nitrate content is one of the most critical factors to determine quality vegetables, and its permissible limits in food chain important human health. Due harmful effects nitrate, many studies have been conducted on accumulation crops recent years. This study assessed nitrate concentrations some edible vegetables associated health risks. Methods: In this descriptive study, raw agricultural produce, such as leafy tubers, cucurbits, kitchen produce grains were collected winter summer. The samples then transferred a laboratory by maintaining temperature-controlled supply chain. After preparing samples, was determined each, using an Ultraviolet-Visible spectrophotometric (UV/Vis) unit. data analyzed statistically SPSS v. 26. Results: mean contents grains, tuber approximately 130, 48, 101, 61ppm, respectively. average around 38ppm summer about 44 ppm. highest documented spinach (1100.15 ppm) lowest tomatos (20.97 ppm). Conclusion: results indicated that found grown northern Iran. risk for non-carcinogenic conditions likely be linked consumption other wheat, rice, potatoes.
